Sugar
  • Sugar is primary fuel for the body.
  • It is naturally encased and held within more complex forms so that it is released slowly as food is broken down
  • Refined sugar is pure sucrose and stripped of valuable minerals and fibre.   It burns rapidly and overstimulate the pancreas to release insulin and leach minerals (calcium in particular) from the bones.
  • White, raw and brown sugar are refined sugar.  The latter is refined white sugar with some molasses added back.

Legumes
  • Beans, lentils and split peas belong to the legume family.
  • Legumes are a rich source of protein and contain all 8 essential amino acids.
  • Legumes are low in fat and are excellent source of complex carbohydrates, B complex vitamins and minerals including iron, calcium, phosphorus and potassium.
  • Legumes are an extremely rich source of fibre which helps to maintain blood glucose levels and lower blood cholesterol; they also contain omega 3 and 6 fatty acids.
  • Eat legumes with food rich in vitamin C to dramatically increase the amount of iron absorbed because the iron in legumes is not absorbed as readily as that in meat.
  • Soak beans in large amounts of water for 6 - 8 hours before cooking.  The complex sugar (oligosaccharides) they contain is difficult for human to digest, hence produces wind.  Soaking allows much of the complex sugar to leach out and dissolve.  It also helps to break down phytic acid, ensuring optimum absorption of their minerals.
